Yann and Emily met in 2014 while harvesting grapes in Pouillé for winemaker Noëlla Morantin. The next year, Emily moved to the village and was followed by Yann and his family the following year. By 2016 Emily’s home-brews were getting positive feedback from neighbours, including Yann, who proposed that they join forces to open Female Boss Brewery, which they established in October of 2017.
Emily Dilling is the author of My Paris Market Cookbook: A Culinary Tour of French Flavors and Seasonal Recipes. In 2005 Emily moved to Paris from her native California and began exploring the cities markets, restaurants, and cafés. In 2010 she founded the blog Paris Paysanne, where she wrote about her favorite addresses and artisans in the city. Emily continues to write about wine, food, and country life in between brewing and spending time with her baby.
Yann Le Pollotec is a professionally trained sommelier and chef. Born in France, he has spent most his life exploring, living, and cooking abroad. After coming of age in the Manhattan restaurant scene, where he worked at Balthazar in its early years, Yann moved to Oslo where he ran his own business as a private chef. He and his family lived in Norway for 13 years before moving to Pouillé in 2016.
